Instant Mango Pickle: Kerala Style











INGREDIENTS:

Mango  - 1 cup
Chili powder - 1 tsp
Coriander powder - 1 tsp
Fenugreek seeds – ½ tsp
Cumin seeds – ½ tsp
Mustard – 1/2 tsp
Curry leaves – few
Salt for taste
Cooking oil


Preparation  
  1. Cut the mango into small pieces.
  2. Add salt and chili powder into the mango, and mix it well.
  3. Dry roast fenugreek seeds and cumin seeds, and powder it coarsely.
  4. Mix the powder with the mango, and keep it aside.
  5. Heat 1 tbsp of oil in an non-stick pan, put the mustard allow it to splatter.
  6. Then add the curry leaf and switch of the flame.
  7. Mix the seasoning with the mango.
