Simple spinach rice | Palak rice










 INGREDIENTS:


Any small size rice (Sona Masoori) or basmati rice- 1 cups
Water - 1 1/2 cup
Palak - 1 bunch
Coriander leaf - 1/2 bunch
Tomato - 1
Onion - 1 medium size
Green Chilli - 3
Garlic - 4 to 5 medium size
Ginger - one medium piece
Chilli powder - 1/3 tbsp
Coriander powder - 1/4 tbsp
Garam Masala - 1 1/2 tbsp
Bay leaves - 2
Cinnamon - 3 to 4 small sticks
Salt for taste
Cooking oil



PREPARATIONS
  1. Wash the rice and spread in on a plate for drying.
  2. Fry the dried rice in pan for 2 to 3 mins. Once the rice start changing the color pour 1 1/2 tbsp of cooking oil and keep frying for another 2 mins.
  3. Then pressure cook the rice with 2 1/2 cup of water.
  4. Finely slice the onion, tomato, green chilli, palak, ginger and garlic
  5. Heat 1 tbsp of oil in a pressure cooker. Once the oil get heated put bay leaves and cinnamon, and sort it until the color changes.
  6. Then add the ginger and garlic paste and sort it for 2 mins. Till the color changes or the raw smell goes.
  7. Add the sliced onion and 1 tsp of salt and sort until onion changes its color.
  8. Pour 2 tbsp of oil to the cooker and add chilli powder, coriander powder, and garam masala.
  9. Fry it till the raw smell goes.
  10. Then add the cut tomato, green chilli and palak and mix it nicely with the masala.
  11. Add 2 tsp of salt and give a nice stir.
  12. Put the fried rice into cooker and pour 2 cups of water. Cook it for 2 whistle in high flame.
  13. Garnish with coriander leaf.
