Egg fried Rice























INGREDIENTS:


Any small size rice (Sona Masoori) or basmati rice- 2 cups
Water - 2 1/2 cup
Eggs - 3
available at home (carrot, beans, green onion)
Green chilly - 5 to 6 small size
Garlic - 8 to 9 large size
Ginger - one medium piece
Salt for taste
Cooking oil



PREPARATIONS
  1. Wash the rice and spread in on a plate for drying.
  2. Fry the dried rice in pan for 2 to 3 mins. Once the rice start changing the color pour 1 1/2 tbsp of cooking oil and keep frying for another 2 mins.
  3. Then pressure cook the rice with 2 1/2 cup of water.
  4. Finely slice the vegetables, green chilly, garlic and ginger.
  5. Take a non-stick pan pour 1 tbsp of oil and saute the ginger and garlic in medium flame till it changes the color.
  6. Add the sliced vegetable and green chilly, and saute for 2 to 3 min in medium flame.
  7. Take another non-stick pan heat 1 tbsp of oil, once the oil gets heated break the eggs pour it into the pan and add salt for taste. Keep sauteing to make egg scramble .
  8. Finally put the egg scramble and fried vegetables into the cooked rice and mix it well.

The roasted chicken can also be replace with fried chicken or boiled chicken. Depending on the availability.
