Very tasty side dish for hot white rice or curd rice. 

Crispy Eggplant | Brinjal | bangan | Kathirikka Fry

























INGREDIENTS:
Brinjal/ Eggplant  - 5 to 6 medium size
Chilly powder - 1/2 tsp
Sambar powder - 1 tbsp
Salt for taste
Cooking oil








PREPARATIONS


  1. Cut the brinjal into thin slices.
  2. Take a big bowl put the brinjal, chilly powder, sambar powder and salt.
  3. Add little water into it and mix it well so that the masala get coated on the brijal well.
  4. Take a non-stick pan pour 3 to 4 tbsp of oil and shallow fry the brijal.
